Pai Mu Tan

This tea is a large leaved, especially fermented tea, which is also known as white tea. The leaf tips are shimmering silvery-white and yield a very light infusion. The taste of this speciality is very mild and pleasantly aromatic. A lot of experience is needed to produce a soft, pleasantly fragrant white tea.

Production process of white tea:

  • Plucking by hand, only the unopened buds are used
  • Steaming and pre-withering in the open air
  • Rolling via careful shaking of the baskets in order to break open the leaf ridges
  • Drying below a basket holder with charcoal where the buds are slowly opening
