Grades

For the preparation of a good quality flavoured coffee it is very important to ensure the right grounding grade which has to be adjusted to the coffee machine which is used. If it is ground too fine, the coffee becomes too bitter, if it is too big, the coffee is very thin and tastes empty. A grade which is too large compared to the needed contact time cannot guarantee that all taste and flavour substances are used. A part of the water then passes too quickly through the filter. On the other hand, a coffee with too fine a grade may cause the water to be in contact with the coffee for too long. A further risk is that the finely ground coffee clogs the filter and, thus, the water might run through the machine without running through the coffee.
