Green Rooibos

With green rooibos, fermentation is sought to be avoided. For this reason, the plant has to be treated very carefully from its harvest onwards. The plants may not be squeezed or placed on top of each other, not watered, and need to be turned and moved frequently. If this is not done carefully, the undesired red colour develops.

Apart from avoiding the fermentation, the production process is similar to that of the rooibos. The green rooibos is dried in sacks and it may happen that the tea ferments itself through its rest humidity, colouring it slightly red. This, then, also indicates whether the tea is still fresh or has already been stored for along time.
